Cloud0 is management subnet of you EVE VM actually, so giving any free IP from your EVE mgmnt subnet will sort your answer..
you can manage nodes from your local pl like you getting access to EVE

On what bare metal HW do you run this on?
CPU, RAM requirements ?

As btter you can afford as will be best

I used Bare EVE, Dual CPU E5-2650v3 with 128G RAM
Same I believe can be esxi VM
40xvCPU and 96G RAM

there are no such workbook, i use this rack when need test or lear technology..
this lab is almost universal to create any task logically on it
