Internal Server Error - Error 500

My apologies if this has a post with resolution somewhere on the forum - I was unable to find it using the built in search or leveraging google for answers.
I'm running a bare metal install of Ubuntu Server + Eve-NG from the guide located on this parent site, and haven't had any issues for over a year and a half. However I installed maintenance packages for my linux server and now I am being issued an error 500 when I attempt to access eve-ng's login page - I havent had any issues in the past until now.
I have done multiple reboots, restarted mysql and apache services and verified that they are operational. However I am unable to get a login prompt when going to the IP for eve-ng on multiple browsers/clearing cache/cookies.
If anyone has any insight, id be extremely appreciative.
