EVE-NG requirements

Hi guys,
Just looking for a bit of advice here.
As looking to run EV-NG as a mini SP LAB. Maybe 4 Cisco Nexus 9K, and 12 cisco routers or 3650's. Budget is around £500 or $650.
Been looking out there and found some descent T5600, with 2x E5-2630 (12 cores), 96GB RAM and 2TB HDD.
Just wondering if that is enough with your experience or would I need more, what would you recommend?
