That's how Eve works, each node requires certain resources cores and ram. You need figure out what nodes and how many of those you want to run per 1 lab and then you put that number into Resource Calculator and you will see total cores and ram. https://www.eve-ng.net/index.php/download/#CALC
Based on that information you should search for a server that has enough cores/ram.

Determine Node Requirements: Identify the nodes you want to run and their resource needs (cores and RAM). Use the Resource Calculator: Input the number of nodes and their requirements into the Resource Calculator to get the total cores and RAM needed. It is advised to use an Intel i7 or higher. RAM: EVE-NG uses a lot of memory. It is necessary to start with at least 8GB of RAM, but 16GB or more is advised for managing several lab conditions at once.
